Personally, I'd screen as I go until the hole got too deep for that to be practical.  If you're working as a team, one of you can remove the dirt and the other can sift it.  And if you think there is a possibility of intact bottles and such, I'd probe the soil gently with old fishing rods, or welding rods, or something similar that will help you figure out both where some of the larger items are and how deep they are.   (you still have to be careful getting down to them just in case you managed to miss the antique plate imported from Holland in the 1820's.)

I've got a 1/4 screen that I use, but most people I know use 1/2 inch.   After my last experience screening, I'm thinking about adding a 1/2 inch myself and using them in tandem (set the 1/4 inch between 6 inches and a foot beneath the 1/2 inch so it can catch any small items that make it through the 1/2 inch).

As far as depth goes, there's a lot of variables to take into consideration like water table level, depth to bed rock, size of family, etc.

Here's a couple of sites that might be of interest:

I can't imagine digging a privy.  I remember as a child having to go out in the bitter cold in the middle of the night to use the outhouse when I'd spend the night at my grandparents house, and it was miserable.  In the summer, it stank so bad it made me want to throw up.  When you guys start talking about digging privies, all I can think of is that outhouse, and you couldn't pay me to crawl down in that hole.  I don't care if the Crown Jewels were down there.

do people usually dig down the actual hole?  or do they dig down along side of it and then dig into it, kind of like you would a well or man hole rescue of sorts?

Wait long enough and everything you guys are objecting to returns to soil.......it's basic composting and soil augmentation.   Of course if you don't wait long enough, it could get messy and smelly.

do you think that digging a hole down next to and paralell with the privi hole could cause a collapse? or do you think it best to just dig straight down in the privi?  i was thinking of doing a hole on the side and straight down and then digging into the privi from the side as you dug down to preserve artifacts and prevent theis destruction, but then i got to thinking of that trash pit that i was just digging, and air being pocketed within the soil, and was wondering if that a shift in air could shift the dirt and contribute to a collapse if i had dug a hole next to the privi
