Ridge Runner never use those pots with Teflon in them it gives off fumes and is carsogenic (cancer causing) just if u didn't know (was a medic-nurse) in the army and Teflon is dangerous on a pot or pan.I use stainless steel as aluminum gives off gasses and causes demention. that's why they took alum.out of paint and lead out of paint. as I painted for 12 years contractor. All my skillets are ss with copper on the bottom.   shortribs.

Not trying to scare you all but that's why there was a official notice and am conscious of the alum and lead etc. Also has been known for some time guys that alum causes dementia as painted for 12 yrs and was conscious of the dangers then the govt.finally took it out of oil paints and alum out of latex paint. and the green Teflon is still guarded concern. I had leukemia for 12 yrs taking 1 shot daily and 3 kinds of medicine until it went into remission at 13 yrs old, Was not allowed to drink any cola or dr pepper only 7up and rootbeer. as the pops has carsagentics in them still today. That's why they even today put vitiman D in milk for people who are poor and poor countries that don't get the proper food etc.

I know it was a problem with the early teflon pans  (1960's).  However, the coatings have been reformulated a bit and unless your pans have significant scratching or you have the habit of leaving them empty on a very hot stove, you are unlikely to be at much risk.

That said, stainless steel with a copper bottom is great, but I like my cast iron  Smiley .

Ahhh, yes!!!! In some parts of the American Southwest, the smell of roasting chili's is a surer sign of autumn coming than is the changing color of the trees (given how few trees there are in some of these parts and the fact that a lot of the trees we do have are "evergreens")    Great

Don't do tomatoes in Iron.    The acid leaches the iron out and it taste nasty.

All depends upon how well seasoned your cast iron dutch oven or skillet is, how long your cooking the stuff and what all you have in it.    I frequently use my cast iron skillet for dishes that require sauteeing chopped tomatoes, onion, and jalepenos, and I've made more pans of spaghetti sauce than I care to count using it.  And if you're making the kind of chili that calls for beans and canned tomatoes over an open campfire, it's kind of hard to get around a good dutch oven.   BUT you do have to use a well seasoned piece of cast iron to start with, AND you have to re-season it a bit after each time you use acidic foods.

Of course if you've got a big piece of enamelware that is in good condition, that would work at least as well as the dutch oven for cooking over an open fire....(or even on a stove top) but those things tend to be a might expensive and once they chip, it's all over but the crying.
